Japanes pepper seed(Sansho) is cultivation in Arima area. Japanese likes grille saury very much. Saury, mackerel and sardine are also by the same cooking way.
Ingredients(4 portion)
600 g or 21 oz. Saury (4 fish)
40 g or 1 1/2 oz. Vinegar
2 g or tsp. Green tea leaf (bag)
700 g or18 oz. Water
200 g or 5 oz. Sake(Rice wine) or white wine
200 g or 5 oz. Mirin(Japanese seasoning) Mirin seasoning direction
100 g or 3 oz Soy sauce Soy sauce direction
50 g or 1 1/2 oz. Sugar
20 g or 3/2 oz. Japanese pepper seed(Sansho)
1912 g or 67 oz. Total. 600 g or 21 oz. Yield(saury)
Directions
1. Saury is grille by charcoal or gas.
2. Grilled sauiry, vinegar and water put in a saucepan,
3. Bring boil on low heat for about one hour. Green tea leaf (bag) is put in for 3 minutes.
4. Add Sake(Rice wine) or white wine, Mirin(Japanes seasoing), Soy sauce, Sugar and Japanese pepper seed(Sansho).
5. Bring low heat for about 40 minutes.
6. Cooled for 1 hour in a saucepan.
