The sesame dressing is very popular in Japan.
Ingredients
155 g or 5.5 oz. of Soy sauce SOY SAUCE LIQUID ("Soy")
100 g or 3.5 oz. of Ground roasted white sesame seeds
220 g or 8 oz. of Salad oil
200 g or 7 oz. of Vinegar
70 g or 2.5 oz Egg yolk
140 g or 5 oz Sugar
115 g or 4 oz Water
1000 g or 35 oz. in total (1000 g or 35 in yield)
Directions
1. Egg yolk and a little vinegar in a food blender and mix.
2. Add salad oil gradually, string between additions.
3. Add ground roasted white sesame seeds, sugar, water, soy sauce and vinegar.
4. Pasteurize by 63C or 145.4F for 30 minutes, then heat the mixture sterding bay rubber ladle in a pot of water heated on the stove.
